Cozy, nourishing dishes to carry you from the first chilly morning to Thanksgiving dinner
Sweater weather means one thing in my kitchen: everything gets cinnamon-spiced and cozy. Pumpkin, squash, apples, sweet potatoes…. I want them all!
The best part? These comfort foods are nutrition powerhouses. They’re packed with fiber, and pumpkin and squash deliver a big dose of vitamin A. Add lean turkey or chicken, and you’ve got meals that warm you up and keep you full.
Here are the 10 that I make every year, from a make-ahead breakfast to a dessert created for fall gatherings.
Shepherd’s pie, meet your fall glow-up. All that savory, meaty filling gets piled into a roasted sweet potato instead of hiding under a mashed-potato lid. You get the same nostalgic flavor with more veggies and a lot less fuss.
Why choose between pie and oatmeal when you can have both? This cinnamon-spiced, apple-studded oatmeal bakes in a single dish and tastes like apple pie for breakfast. Make it on Sunday, then cut a square and reheat all week long.
Grilled cheese, but make it Autumn. Roasted butternut squash and crisp apple slices get tucked between layers of melty cheddar, along with sweet caramelized red onion. It might be the most fall thing I’ve ever made.
Chili just got a fall makeover. Lean ground turkey simmers with white beans and warm spices, and a can of pumpkin puree makes it extra hearty with a subtle sweetness. Your whole kitchen will smell heavenly.
Don’t let the word “salad” fool you. This one eats like a meal. Roasted squash and tender kale get tossed with pistachios and pomegranate arils, then coated in a maple-citrus Dijon dressing that pulls it all together. It’s pretty enough for a holiday table.
All the deep, oniony flavor of French onion soup, twirled into a cozy dinner. Roasted spaghetti squash stands in for pasta and soaks up every bit of that cheesy, caramelized goodness. You’re sneaking in a serious veggie boost, while enjoying an indulgent feast… win-win!
Pumpkin in meatballs? Trust me on this one. Tender turkey meatballs get a swirl of pumpkin and warm spices, then bake up golden and juicy. Spoon them over pasta or tuck them into a crusty roll for a saucy meatball hero. Messy and totally worth it.
Load up the slow cooker in the morning and come home to a house that smells amazing! Salsa verde gives this chili its zesty kick, while beans and butternut squash make it hearty. Proof that low-effort dinners can taste incredible.
All the flavor of pumpkin pie in bite-size portions. Each one is warmly spiced with just the right amount of sweetness. Set out a tray at your next fall get-together and watch them vanish!
Pick one to make this weekend. I’m hoping you love them as much as we do!
xx, Joy
