5-Minute Salsa Chicken Slaw (No-Cook Healthy Lunch)
Tender rotisserie chicken tossed with crunchy coleslaw mix and bold, flavorful salsa — finished with a squeeze of fresh lime to make everything pop. This easy no-cook chicken slaw comes together in just 5 minutes and tastes like you put in way more effort than you actually did.

This recipe is built on three of my favorite kitchen shortcuts:
- Coleslaw mix is your kitchen BFF — pre-shredded, crunchy, colorful, and zero knife work required
- Salsa is the ultimate flavor bomb — tomatoes, onion, garlic, and spices all in one jar, ready to go
- Rotisserie chicken is the ultimate protein shortcut — tender, juicy, and already cooked for you
Together these three ingredients create a base that is greater than the sum of its parts — fresh, crunchy, bold, and incredibly satisfying.





This meal comes with major “why didn’t I think of this sooner?” energy! It’s protein-packed, veggie-loaded, naturally gluten-free, and endlessly versatile. Keep it simple or dress it up with fun add-ins like diced avocado, black beans, fresh cilantro, or a drizzle of hot sauce — however you make it, it’s big flavor with minimal effort.


This recipe was actually inspired by my Slow Cooker Salsa Pulled Chicken — and if you happen to have leftovers, it’s the perfect swap. That chicken is already saucy and packed with flavor, so all you need to do is toss it straight into the coleslaw mix and lunch is handled in seconds.

5-Minute Salsa Chicken Slaw (No-Cook Healthy Lunch)
Ingredients
- 1 cup shredded rotisserie chicken*
- 1 to 2 cups coleslaw mix, use 2 cups for extra volume and crunch
- ½ cup salsa, mild, medium, or hot
- Fresh lime juice, to taste
Optional add-ins
Creamy Boost
- ¼ –½ avocado, diced
- 1 –2 tablespoons plain Greek yogurt, stir into salsa first for a creamy dressing vibe
- 1 tablespoon light mayo
Fresh & Bright
- Chopped cilantro
- Diced red onion
- Scallions
- Extra lime zest
Spicy Kick
- Pickled jalapeños
- Dash of hot sauce
- Sprinkle chili powder or smoked paprika
Savory Upgrade
- Crumbled cotija or feta
- Shredded pepper jack
- Light sprinkle taco seasoning
Crunch Factor
- Toasted pepitas
- Crushed tortilla chips
- Chopped or sliced almonds
Instructions
- Add shredded chicken and coleslaw mix to a medium bowl.
- Toss thoroughly with ½ cup salsa, making sure everything is evenly coated.
- Finish with a generous squeeze of fresh lime juice. Toss again. Serve immediately and enjoy.
Notes
- Spoon into lettuce cups
- Wrap in a whole-grain tortilla
- Serve over quinoa or brown rice
- Stuff into a baked sweet potato
- Add cheese and broil for a warm version
