• 1 whole-grain tortilla
• 2 heaping tablespoons marinara or tomato sauce*
• ¼ cup shredded part-skim mozzarella cheese
• Red pepper flakes (optional)
• Oregano (optional)
• 1 to 2 teaspoons fresh basil, minced
*If using plain tomato sauce, mix in a pinch of oregano, garlic powder and onion powder to enhance the flavor.
Set the oven to broil.
Place the tortilla on a baking sheet lined with aluminum foil and put it in the oven on the top rack. Cook for 3 to 4 minutes total, flipping after each minute. (Note: Ovens and tortilla ingredients will vary, so watch carefully so the tortilla doesn’t burn.)
Remove the tortilla from the oven and spread the sauce on top, covering the majority of the tortilla except for a border of about ¼ inch all the way around. Sprinkle on the mozzarella cheese, season with red pepper flakes and oregano, if desired, and place back in the oven for about 30 seconds, until the cheese is melted.
Garnish with fresh basil. Cut into slices and enjoy your personal pie.
