  • 1 pound ground turkey, 90 – 94% lean
  • 1 tablespoon soy sauce
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ teaspoon kosher salt
  • ¼ teaspoon black pepper
  • 2 cups shredded cheddar cheese

Special Sauce:

  • ¼ cup ketchup
  • ¼ cup light mayo, or plain Greek yogurt**

Optional Toppings:

  • Pickle chips
  • Diced onions
  • Chopped tomatoes
  • Avocado slices
  • Minced herbs, like parsley or chives
  • Crumbled turkey bacon

Place them directly on the oven rack, with a baking sheet on the rack below to catch any drippings. Bake for 50-60 minutes, or until fork-tender. (Cooking time may vary depending on the size of your potatoes, so start checking at the 45-minute mark.)
  • Cook the filling: While the potatoes are roasting, heat a large skillet over medium heat. Add the ground turkey, breaking it up into small crumbles. Once it’s more than halfway cooked, stir in the soy sauce, Worcestershire sauce, garlic powder, onion powder, salt, and pepper. Continue cooking until the turkey is browned and fully cooked.
  • Scoop and mix: Once the potatoes are cool enough to handle, slice them in half lengthwise. Carefully scoop out the insides, leaving a thin layer of potato to keep the skins sturdy and intact. Add the scooped-out sweet potato to the skillet with the cooked turkey. Stir in 1.5 cups of shredded cheddar until everything is well combined.
