Yield: 80balls
Prep Time: 10 minutesmins
Total Time: 10 minutesmins
Ingredients
1largewatermelon, sliced in half
1cuptequila
¾cuporange liqueur, or orange juice
½cuplime juice
Optional: Coarse kosher or sea salt and lime zest for garnish
Instructions
Scoop the watermelon: Start by creating watermelon balls using an ice cream scoop. As you scoop, place the balls into a large bowl, leaving any juice behind in the watermelon halves (the juice will add incredible flavor when it mingles with the margarita mix!). Then, add these balls back into your hollowed-out watermelon halves, aka “watermelon bowls”
Prepare the margarita mix. In the same bowl you used for the watermelon balls (because who wants to clean extra dishes?), combine the tequila, orange liqueur or juice, and lime juice. Stir well to mix.
Pour the margarita mix into the hollowed-out watermelon halves, making sure the balls are fully coated in the mixture. Cover the watermelon halves and refrigerate for at least an hour—though you can let them chill for several hours if you want them extra cold and flavorful.
Just before serving, sprinkle with coarse salt and lime zest for additional flavor and fun. You can also fancy up the presentation by garnishing with some fresh mint leaves.
Notes
Storage tips: • If you have any leftover watermelon balls, you can store them in an airtight container in the refrigerator for up to 2 days. The flavor will continue to develop, making them even more delicious the next day. However, they may soften slightly over time. For a non-alcoholic version:• Simply omit the tequila and make your mix with 1 cup OJ + ¾ cup lime juice (this amount is for a whole watermelon). Follow the instructions for reserving the watermelon juice in the hollowed-out shells for an extra-delicious marinade. The result will be a refreshing, flavorful treat minus the booze! To make ahead: • If you’re planning to make this ahead of time, prep the watermelon balls and margarita mixture separately, and then combine them about an hour or so before serving to keep the watermelon fresh and firm.
