Ingredients
½cupchopped onions*
½cupsliced mushrooms*
½cupchopped red bell pepper*
1egg
3egg whites
Optional seasonings: dash of salt, pepper, garlic powder, hot sauce, salsa
Instructions
Liberally coat a small skillet with oil spray and preheat the pan over medium heat. Sauté the onions, bell peppers and any other vegetables until soft, 5 to 7 minutes.
In a small bowl beat the whole egg with the egg whites and add optional seasonings (salt, pepper, garlic powder). Add the eggs to the skillet.
When the bottom of the omelet is cooked, gently flip and cook the other side. Fold one side over the other.
Top the omelet with the optional salsa or hot sauce and serve.
