In my house, Turkey Tacos are a sure thing—we never have leftovers. I love this recipe because it’s ready in less than 30 minutes and it’s packed with loads of nutrient-rich ingredients.

Ingredients
1¼poundsground turkey, at least 90% lean
1packet taco seasoning mix, preferably low-sodium or 2 tablespoons of my DIY Taco Seasoning Blend
2cupschopped or shredded lettuce
1large tomato, chopped
1cupshredded reduced-fat cheddar or Mexican-blend cheese
8corn taco shells, hard or soft
Salsa and/or hot sauce, optional
Nonfat plain Greek yogurt or light sour cream, optional
Optional toppings of your choice, feel free to experiment with other toppings, including chopped bell peppers, red onions, beans, corn, guacamole and more
Instructions
In a large skillet misted with nonstick oil spray, cook the turkey over medium-high heat until browned. Drain the fat. Stir in the taco seasoning with a bit of water (as indicated on the seasoning package) and bring the mixture to a boil. Reduce the heat to medium-low and simmer, stirring occasionally, 5 to 6 minutes.
Evenly divide the turkey mixture, lettuce, tomato, and cheese among the taco shells. Top with salsa, hot sauce, and Greek yogurt, if desired. Alternatively, set up a toppings bar and let everyone fend for themselves.
