Ingredients
1slicewhole grain bread, toasted
½cupblueberries, fresh or frozen
2teaspoonchia seeds
2tablespoonsflavored Greek yogurt
Optional honey to drizzle on top
Instructions
Microwave the blueberries in a microwave-safe bowl just until they soften and release their juices — start with 30–40 seconds, then microwave in 10–15 second bursts as needed (microwaves vary!).
Remove from microwave, stir in chia seeds and allow to set for about 5 minutes. Stir again.
Spread yogurt on toast, top with jammy blueberries, and drizzle any leftover berry liquid and optional honey over the top.

The addition of chia seeds mixed into the syrupy blueberries, enables the liquid to become thicker and jammier. You can also swap in ground flaxmeal or skip the chia seeds completely and leave the liquid thinner to pour over the top of your toast.
Feel free to use any favorite flavored Greek yogurt. You can also swap the yogurt out for cottage cheese, ricotta cheese, or even a spread of light cream cheese.
