Ingredients
1slicewhole grain bread, toasted
½cupblueberries, fresh or frozen
2teaspoonchia seeds
2tablespoonsflavored Greek yogurt
Optional honey to drizzle on top
Instructions
Warm blueberries: Microwave the blueberries in a microwave-safe bowl just until they soften and release their juices — start with 30–40 seconds, then microwave in 10–15 second bursts as needed (microwaves vary!).
Mash blueberries: Remove from microwave (be careful, it’ll be hot), and mash the larger pieces with a fork or the back of a spoon. This will help breakup some of the larger chunks.
Thicken with chia: Remove from microwave, stir in chia seeds and allow to set for about 5 minutes. Stir again.
Assemble the toast: Spread yogurt on toast, top with jammy blueberries, and drizzle any leftover berry liquid and optional honey over the top.
