This pie-in-a-bite treat delivers the creamy, dreamy indulgence of a banana cream pie in a simple format that’s loaded with nutrition.

Ingredients
10Medjool dates, pitted
1large ripe banana
1single serve vanilla Greek yogurt, ¾ cup*
1square graham cracker, crushed
Instructions
Prepare filling. Peel the banana, cut off about a quarter of the banana from its end, and slice into 10 thin circles. Set these slices aside for later. Mash the remaining larger banana piece in a small mixing bowl. (If the banana is too hard to fully mash, microwave for 20 to 30 seconds to soften it up.) Mix in the yogurt. Cover and chill in refrigerator while you prepare the dates.
Prepare the dates. Spread open each date lengthwise, while keeping the bottom of the two halves attached. Smash each date into a flattened disc by pressing down with your fingers and palms. Place them on a tray or baking sheet lined with parchment paper, with the insides facing up. (See picture)
Build your date pies. Add a tablespoon of filling to the center of each flattened date. Place a banana slice of top and sprinkle with crushed graham cracker.
Notes
* I like to use flavored yogurt brands sweetened with stevia or monkfruit (without added sugar), such as Oikos Triple Zero or Too Good. • You will have ~¼ cup filling leftover to enjoy on its own (it’s so yummy) or dollop on extra dates with crushed graham crackers while omitting the sliced banana, since the 10 slices are used up. • I suggest lining your plate, tray, or baking sheet with parchment paper to ensure the dates don’t stick while you’re flattening them out. Plus it will make cleanup easier!• Serve immediately for the best experience. But you can also stash them in a sealed container in the fridge for up to two days. They’ll hold their shape and still taste delicious!
