2cupssemisweet or dark chocolate chips*
2cupscrispy brown rice cereal**, not “puffed” rice cereal***

*If you follow a dairy-free diet, choose dairy-free chocolate chips.**If you follow a gluten-free diet, choose a certified gluten-free cereal. (Be careful of malt added to some cereals!)***Be sure to use a "crispy" rice cereal since that is what provides the crunch (do not use a "puffed" rice cereal). Also, try to find a brand that makes a brown rice version. But if you can't find one, a regular crispy rice cereal (like Rice Krispies, although not gluten-free) will work perfectly, too.
Instructions
Line a baking sheet with parchment paper and set aside.
Melt the chocolate chips in a double boiler or saucepan on the stovetop over low heat. Alternatively, you can melt the chocolate in the microwave by heating for about 30 seconds at a time, stirring in between, until the chocolate is smooth and velvety.
Add the crispy rice cereal into the melted chocolate and mix thoroughly.
Spread the mixture on the prepared baking sheet (it doesn't have to be perfectly shaped, and will likely not reach the outer edges) and place it in the fridge for at least 30 minutes. Once it’s cool, cut into bars or break it into irregular pieces and place them on a festive serving tray.
