If “crunchy” is your thing, this recipe is for you – the cauliflower florets crisp up beautifully in the oven.

- 1 head cauliflower, cut into small florets
- 1/4 teaspoon Kosher salt
- 1/4 teaspoon ground black pepper
- 1/4 cup grated Parmesan cheese
Preheat the oven to 400°F. Line two baking sheets with aluminum foil and liberally coat the foil with oil spray.
Divide the cauliflower florets between the two baking sheets, and arrange the florets in a single layer on the baking sheets. Mist the cauliflower with oil spray, and sprinkle with the salt and pepper.
Bake for 30 minutes, or until the cauliflower is golden brown and crispy at the edges, tossing the florets and rotating the baking sheets once halfway through.
Sprinkle the cheese evenly over the cauliflower. Return to oven and bake for 5 minutes.
