Here, we put our own signature spin on it—oh, hello BEER—and it’s on regular rotation in my house because it takes little time to prepare and everyone in my family loves to gobble it up.

Ingredients
1onion, finely chopped
3clovesgarlic, finely chopped
212-ounce bottles of favorite beer
2cupswater
3lemons, halved
2 to 3tablespoonsOld Bay seasoning
½tablespoonblack peppercorns
3bay leaves
4 to 6earscorn, husked and cut into halves or thirds
2poundsshell-on shrimp, medium or large*

Instructions
In a large pot, add all ingredients (except corn and shrimp) and bring to a boil. Reduce the heat to medium-low and simmer, covered, for 5 to 8 minutes.
Bring back up to a full boil, add the corn and shrimp, and cook for about 3 to 4 minutes, or until the shrimp are opaque and cooked through and the corn is crisp-tender (cooking time will vary depending on the size of the shrimp). Stir occasionally during cooking.
Using a slotted spoon, transfer the corn and shrimp from the pot to a large serving bowl. Spoon some of the cooking liquid over the top and add the lemon wedges over the shrimp.
Notes
• Beer substitutions: If you'd rather skip the beer, simply replace it with an equal amount of water. You'll still end up with a flavorful shrimp boil thanks to the onions, garlic, lemons, Old Bay seasoning, bay leaves, and peppercorns. Joy doesn't recommend using broth, as the Old Bay already adds plenty of flavor (and sodium). If you're avoiding alcohol but still want the malty depth that beer provides, a non-alcoholic beer is an excellent substitute.• Making a double batch: I often make this for large family gatherings, and this is my favorite way to double the recipe. I cook the first 2-pound batch of shrimp, remove it from the pot, then add a second 2-pound batch of raw shrimp to the same seasoned broth and cook as directed. The broth is already packed with flavor, so it's an easy way to make more without any extra fuss.
