Ingredients
2tortillas*
¼cupjarred marinara sauce
¼cupshredded part-skim mozzarella cheese, more for top sprinkle
2slicestomato for hearts
*I use a low-carb whole grain tortilla brand, which is reflected in the nutrition (each tortilla is 60 calories, 5 grams protein, 10 grams fiber). Choose a type that fits your eating style.
Instructions
Preheat oven to 400˚. Mist a baking sheet with nonstick oil spray. Place 1 tortilla on top and using a heart cookie cutter, cut out 2 hearts. Remove tortilla from baking sheet and set aside.
Place second uncut tortilla on baking sheet and layer with marinara sauce and cheese. Place 2 tomato slices on top and cover with original tortilla with heart cut-outs, being sure to line up the hearts with the red tomatoes underneath.
Mist the top with oil spray and sprinkle on optional shredded cheese. Bake in oven until cheese is all melty and the tortillas are toasted lightly browned, about 8 minutes (watch closely so it doesn’t burn).
Garnish with optional herbs, like chopped chives or minced basil, and slice into pieces!
