Rise and shine with these beautifying waffles made with a trendy green powder called matcha. They are soft and fluffy on the inside, perfectly crispy on the outside.

Ingredients
1cupwhole wheat flour, or white whole wheat flour*
1teaspoonbaking powder
1large ripe banana
1egg
2teaspoonsvanilla extract
2 to 3teaspoonsmatcha powder
1cupunsweetened almond milk, or light unsweetened coconut milk
Optional toppers
Slivered almonds
Sliced strawberries
Maple syrup

*If you follow a gluten-free diet, swap in a 1:1 gluten-free baking flour.
Instructions
Place the flour and baking powder in a small bowl and stir to blend. Set aside.
Place the banana in a medium bowl and mash with a fork. Add the egg, vanilla and matcha powder and blend. Then add the almond milk and stir.
Add the dry ingredients into the wet ingredients, and stir until incorporated. Let the batter sit while you heat the waffle iron.
Heat a waffle iron to medium setting. When the iron is ready, mist the top and bottom with nonstick oil spray. Then add 1/4 cup of the batter per compartment, close the lid and cook for about 3 minutes (waffle machines will vary in cooking time, so use your discretion and adjust accordingly).
Open the lid and carefully remove each waffle with a fork or bamboo skewer. Place on a cooling rack, so the waffles don’t get soggy, while you finish making the entire batch.
Serve the waffles topped with optional toasted almonds, sliced strawberries and/or maple syrup.
