This gloriously colored pound cake offers great flavor plus a powerful dose of ground green tea called matcha powder.

Ingredients
1½cupswhole wheat flour
½cupbrown sugar
1½teaspoonsbaking powder
1teaspoonbaking soda
½teaspoonkosher salt
1cuplow-fat buttermilk
4tablespoonsbutter, melted
2eggs, lightly beaten
1tablespoonmatcha, powdered green tea, dissolved in 1 tablespoon hot water
2teaspoonsvanilla extract
Instructions
Preheat the oven to 350°. Coat a 1-pound loaf pan with oil spray.
In a large bowl, combine the flour, brown sugar, baking powder, baking soda, and salt. Add in the buttermilk, eggs, melted butter, vanilla extract and mix until well combined. It’ll be a spongy consistency. Blend in the matcha paste and stir until it’s well distributed and the batter turns has a green hue.
Pour batter into prepared loaf pan. Bake for about 35 minutes, or until the top begins to brown and a toothpick inserted into the middle of the loaf comes out clean. Let cool on counter for 5 minutes. Remove cake from the pan and cut into 8 slices.

This recipe results in a super moist and gently sweet cake. To sweeten the flavor, increase brown sugar to ¾ cup (each slice will then become 230 calories).*Note: Matcha powder can be found in the natural foods aisle of major supermarkets; it should not be confused with regular green tea bags or loose green tea.
