Ingredients
2large kiwi, diced (about 2/3 cup)
½cuploosely packed spinach
¼cupfresh mint, about 12 leaves
¼avocado
1frozen ripe banana, or 1 regular banana + 3 to 5 ice cubes
1¼cupsalmond milk
Juice of ¼ lime
Instructions
Add all ingredients to a blender and process until smooth and thick.
To make a Chia Pudding Parfait:
Add 6 tablespoons of chia seeds to the smoothie recipe while blending.
Then, pour into a bowl, cover and place in the refrigerator for at least 3 hours or overnight, to allow enough time for the chia seeds to gel and transform the smoothie into a thickened pudding consistency.
Place the chia pudding in 2 glasses and layer with granola and sliced kiwi.
