Summer desserts are meant to be enjoyed à la mode, and this stylishly fruity treat is the perfect sweet ending to your day.

Ingredients
1fresh pineapple, whole
¼cup scoopvanilla ice cream or frozen yogurt
1teaspoonpeanut butter, melted
1teaspoonchopped peanuts
Instructions
Cut the top and outer skin from pineapple, core it and slice into 6 to 8 rings about ¾-inch thick. (You will have extra if only making one serving.) Lay flat on a tray and mist with oil spray. Place on a hot outdoor grill or indoor grill pan and cook until deeply golden and caramelized, about 10 to 15 minutes. Flip with a wide spatula and cook the other side until it’s equally caramelized and delicious.
Transfer the pineapple ring(s) to a platter, and right before serving, add a scoop of vanilla ice cream or fro-yo to each. Finish it off with a zigzag drizzle of melty peanut butter and a sprinkling of chopped peanuts.
Notes
• For ease, you can always purchase cored pineapple from the supermarket instead of having to cut off the skin and core it yourself. • Spraying the tops of the pineapple with oil spray ensures they don't stick to the grill. • I use a wide spatula to flip the pineapple instead of tongs because you want to avoid breaking the rings. However, if they do break, it will still be delicious and give the dish a unique presentation. ;)• You can swap the peanut butter and peanuts for any preferred nut butter and nuts.• To melt nut butter, add to a small microwave-safe ramekin and microwave for about 30 seconds to get it liquidy so you can easily drizzle with a spoon.• For an uber-healthy dessert, swap the ice cream for Greek yogurt. You can use a vanilla-flavored yogurt that's sweetened with sugar or one that's sweetened with stevia or monkfruit, such as Oikos Triple Zero, Oikos Pro, or Too Good. You can also use plain Greek yogurt and sweeten it with honey or maple syrup. • If you’re following a gluten-free diet, be sure to carefully read the packaging for each ingredient.
