Ingredients
½-inchpiece fresh ginger, peeled and minced
2tablespoonsbrown sugar
1cinnamon stick
2cloves
½cupwater
Pinchkosher salt
1 to 2gingersnap cookies, optional for rim
1ouncevodka
Squeeze lime juice
2ounceshalf and half
2tablespoonsaerated whipped cream, optional
Instructions
For the spiced ginger syrup:
Add ginger to a small saucepan along with brown sugar, cinnamon stick, cloves, water and salt. Bring to a boil, then reduce heat to low and simmer for about 20 minutes, stirring occasionally. Allow to cool, then strain syrup* through a fine-mesh strainer. Store in refrigerator until ready to prepare drink (will keep for up to 2 weeks).
For optional lined rim:
Rim a glass with gingersnap cookie crumbs by running a lime wedge along the edge and dipping into a plate of crushed cookie (1 to 2 small cookies per drink).
Pour vodka, lime juice, 1 ounce gingerbread syrup, and half and half into a cocktail shaker with ice. Cover shaker, shake and strain drink into rimmed glass. Top with an optional squirt of whipped topping and any leftover crushed cookie.

*NOTE: This makes just enough syrup for 1 to 2 drinks. To make more, keep the 4:1 ratio of water to sugar and increase based on number of drinks needed.Add 30 calories for 1 gingersnap cookie and 10 calories per tablespoon optional whipped topping.
