Ingredients
4large bananas, ripe but firm
8wooden popsicle sticks
1cupsemi-sweet chocolate chips
Topping options (¼ cup):
Granola
Shredded coconut
Toasted crushed nuts and/or seeds
Graham cracker or pretzels, crushed
Freeze-dried strawberries, crushed
Optional: whipped cream and cherries for garnish
Instructions
Peel, then cut each banana in half horizontally and carefully insert the wooden stick into each half (popsicle-style). Place in a freezer bag or sealed container and stash in freezer until frozen, about 3 hours.
Spread out ¼ cup toppings of choice on a flat surface, such as a shallow dish, cutting board or baking sheet.
Melt the chocolate chips by placing them in a microwave-safe bowl and microwaving for 30 seconds, stirring, and continuing this same routine for 20-second increments until chocolate is velvety smooth.
Carefully dip each of the frozen bananas into the chocolate, twirling to coat at least the top half. You can use a spatula or the back of a spoon to spread the chocolate up and around the banana. Then immediately roll in the toppings of choice.
You can either serve immediately with melty chocolate (messy, but delish) or I like to place them back in the freezer on a baking sheet lined with parchment paper until the chocolate firms (about 30 minutes). You can stash leftovers in a freezer bag for future treats!
