3cupsthinly chopped romaine
4tablespoonsshaved or shredded Parmesan
¼cupcroutons, optional
Avocado Caesar Dressing (Makes about ¾ cup)
⅓cupmashed avocado, about ½ an avocado
1clovegarlic, minced
2tablespoonsfresh lemon juice
2teaspoonsWorcestershire sauce
½teaspoonDijon mustard
¼cupgrated Parmesan cheese
¾teaspoonkosher salt
½teaspoonground black pepper
6tablespoonswater
1teaspoonanchovy paste, optional
Instructions
Make the Avocado Caesar Dressing
Place all ingredients in a food processor or powerful blender and mix until thoroughly combined and smooth. Use 4 tablespoons for Chicken Caesar Salad Pizza and store remaining dressing in an air-tight container in the fridge.
Build the Chicken Paillard Caesar Salad
Pound chicken breast super thin (and as round as possible) to look like pizza crust. Season with salt, pepper and preferred spices. Warm a pan, sprayed with oil spray, over medium heat. Cook chicken about 5 to 7 minutes on each side, or until cooked through. Remove from pan and allow to cool.
Top chicken “crust” with 2 tablespoons of Caesar dressing. Top with romaine lettuce. Add Parmesan, plus an additional drizzle of 1 to 2 tablespoons of Caesar dressing and ground black pepper.
