This naturally sweet cherry compote is the perfect topping for my delicious vanilla-cinnamon French toast.

Ingredients
FOR THE COMPOTE:
1cupfrozen, pitted sweet cherries
1teaspoonvanilla, or balsamic vinegar
FOR THE FRENCH TOAST:
1whole egg
1egg white
Dash ground cinnamon
Dash ground nutmeg
1teaspoonvanilla extract
2slices100% whole-grain bread
Instructions
For the compote:
Add cherries and vanilla to a small saucepan over medium heat. As cherries begin to defrost, mash down with a spoon as you stir in order to release some of the juices from the cherries.
Cook, stirring occasionally, for about 5 minutes, or until juices thicken slightly. Remove from heat and set aside while you prepare the French Toast.
For the French toast:
Whip the whole egg plus the egg white with the cinnamon, nutmeg and vanilla extract in a small bowl.
Generously coat a skillet with oil spray and preheat over medium-high heat. Dunk and coat both slices of bread in the egg mixture. Place the bread slices in the skillet and cook for 1 to 2 minutes per side, or until crisp.
Pour Cherry Compote over French Toast and enjoy!
