Start by slicing your mandarins into approximately 14 segments total, keeping the skin on.
Remove any pith from the slices.
Next, thinly slice your lime and then halve the slices. Remove the juicy fruit, leaving only the peel, and cut each peel in half to create small, thin strips. Aim for around 24-42 strips, depending on your preference for the “carrot tops.”
In each ice cube compartment, place an orange slice followed by a few lime peel strips tucked underneath, ensuring they’re nestled snugly.
Fill each compartment halfway with water and freeze for about three hours, or until solid.
