Ingredients
Bones from 1 chicken, all skin and fat removed
6carrots, peeled and chopped
2onions, peeled and chopped
4stalks celery, chopped
6clovesgarlic
1tablespoonwhole peppercorns
1bay leaf
Handful parsley
24cups1½ gallons water
Instructions
Place all ingredients in a large pot and bring to a boil. Turn flame to low and simmer for 12 to 24 hours on the lowest heat (the longer you cook your broth, the more nutrients it will contain).
Add 2 to 4 cups of water every 6 hours.
When broth is done, strain in a fine mesh strainer into a bowl or container. Let it cool in the refrigerator and remove any fat that has risen to the top.
Broth can be used in soups, stews or sauces. You can also freeze it for several months.
