Beyond Burger with Grilled Peaches and Avocado Mash

Ingredients
1Beyond Burger, defrosted
1 to 2grilled peach slices*
1ripe avocado
1tablespoonlime juice
1 to 2tablespoonsminced cilantro
Salt and pepper, to taste
Pinchcayenne, optional
1Whole grain hamburger bun
Instructions
Add the avocado to a small mixing bowl and mash with a fork until it reaches your preferred consistency, velvety smooth or textured with chunks. Add lime juice, cilantro, salt and pepper. Mix until ingredients are well blended, then taste and season with extra lime juice, salt and pepper as needed. Add optional cayenne for heat, if desired. Set aside.
Warm a skillet over medium-high heat. Mist with oil spray and cook burger for 4 minutes on each side.
Build your burger by layering lettuce greens on the bottom half of your bun. Add the burger, grilled peach slice(s) and 1-2 tablespoons of avocado mash. Cover with top bun and enjoy!
Notes
* To grill peaches, lay peach sliced flat on a tray and lightly mist with oil spray. Place on a hot outdoor grill (or indoor grill pan) and cook one side only until slight char marks appear, about 4 to 5 minutes. Watch closely so they don’t burn.
