I transform classic pulled pork sandwiches into leaner and lighter bite-sized sliders.

Ingredients
For the pulled pork
2yellow or Vidalia onions, thinly sliced
3poundspork tenderloin, cut into 2 to 3 large pieces
2 ¼cupsbarbecue sauce
2tablespoonsWorcestershire sauce
1teaspoonpaprika
½teaspoongarlic powder
½teaspoonsalt
½teaspoonground black pepper
For each sandwich
1whole-grain slider bun
1heaping tablespoon store-bought or homemade coleslaw
1optional sunny side-up egg
Instructions
Liberally coat a large skillet with oil spray. Sauté sliced onions until browned and caramelized, about 8 minutes over low-medium heat, stirring occasionally.
Place the pork tenderloin in the bottom of a slow cooker.
Mix the remaining pulled pork ingredients in a small bowl. Pour the mixture over the pork in the slow cooker, add the sautéed onions, and stir to coat the pork completely. Cover and secure the lid. Cook on high for 4 hours or low for 7 to 8 hours.
When you lift the cover, the inside will be very watery. This is normal. Carefully lift out the pork, place it on a plate, and shred with two forks.
Place all of the shredded pork back into the slow cooker and combine with the saucy liquid and mix until all the liquid is absorbed. Season with additional salt and pepper to taste.
To assemble each sandwich, place ¼-cup scoop of saucy pork on a lightly toasted whole-grain slider bun and top each with 1 heaping tablespoon coleslaw. Cover with the top half of the slider bun.
