Sheet Pan Brussels Sprouts with Sunny Side Eggs

This sheet can’t be beat! First, I lay a sheet with quartered Brussels sprouts and roast in the oven. Then, midway through the roasting process, I crack a few eggs over the top and let them nestle into the sprouts, allowing them to bake until the yolks are gently cooked and whites are firmed. Topped with pecorino or Parm, the dish is sprout-of-this-world good.
