Zucchini Walnut Muffins

There’s muffin’ better than these Zucchini-Walnut Muffins. They feature whole-grain flour for extra fiber; applesauce, which brings sweetness without added sugar; zucchini, which lends moisture and delivers lots of nutrients; buttery, omega-3-rich walnuts; and delicious spices and flavorings.  Whip up a batch this weekend and enjoy them all week long. Everyone will go nuts over them.

This recipe makes 9 muffins
Ingredients:
  • • 1¼ cups whole wheat flour (or all-purpose gluten-free flour)
  • • 1 teaspoon baking powder
    • 1 teaspoon baking soda
  • • 1½ teaspoons ground cinnamon
  • • ¼ teaspoon ground nutmeg
  • • ½ teaspoon kosher salt
  • • ½ cup walnuts, chopped
  • • ¾ cup grated zucchini (about ½ medium zucchini)*
  • • 2 eggs, lightly beaten
  • • ¾ cup unsweetened applesauce
  • cup maple syrup
  • • 2 teaspoons vanilla extract

*Grate zucchini with the skin on using the largest hole of a box grater.

Preparation:

Preheat oven to 350˚. Mist a standard muffin tin with nonstick oil spray or insert paper liners and lightly mist the liner insides to prevent muffins from sticking. Set aside.  

In a medium bowl, add the flour, baking powder, baking soda, cinnamon, nutmeg, salt, and walnuts. Whisk to combine.

In a separate medium mixing bowl, add the wet ingredients (grated zucchini, eggs, applesauce, maple syrup and vanilla extract) and mix until blended.  

Add dry ingredients to the wet ingredients and blend to create a thick batter. Be careful not to overmix; you want to stir until there are no more streaks of flour and then stop.  

Fill 9 muffin compartments with batter and garnish with an optional walnut on top. Bake in oven on middle rack for about 20 minutes, or until a toothpick inserted into the middle of a muffin comes out clean.
