Watermelon Jalapeño Mocktails

Spicy and sparkling, this mocktail hits the spot. The watermelon offers a gentle sweetness and the bubbly Pastèque (aka watermelon-flavored) LaCroix Sparkling Water adds pizzazz. If you like heat (like my family!), keep the jalapeno seeds and membranes intact and muddle them slightly at the bottom of the glass to release more fire into the watermelon juice. For less heat, remove the seeds and membranes and simply let the slices float for subtle flavor and a pop of pretty green color. Either way, it’s a refreshing and sassy sipper.

This recipe makes 2 servings
Ingredients:
  • • 2 heaping cups watermelon cubes, chilled
  • • 2 tablespoons lime juice
  • • 1 jalapeño, sliced
  • • 1 can LaCroix Pastèque Sparkling Water
Preparation:

Add chilled watermelon cubes to a blender along with lime juice and purée until it becomes juice, it will take about 30 seconds.

To the bottom of two cocktail glasses add 2 to 3 jalapeño slices.* Top each with a few ice cubes.

Pour the watermelon-lime juice into the glasses and top each with ¼ to ½ cup Pastèque flavored LaCroix Sparkling Water.

 

*For extra heat, keep membranes and seeds intact and muddle the slices at the bottom of the glass to release fiery compounds. For less heat, remove seeds and membranes from jalapeño slices before adding to glass and simply let them float.
