This two-ingredient dish featuring tempeh (fermented soy) is super easy to throw together and so delicious. Even the kids will enjoy it—they won’t even know it’s soy! Feel free to use your own homemade teriyaki marinade if you’d like. Serve over brown rice along with a mixed green salad to make it a complete meal. Dinner is served—just like that.

This recipe makes 2 servings
Ingredients:
  • ½ cup reduced-sodium teriyaki sauce
  • 8 ounces tempeh, cut into ¼-inch strips
Preparation:

Pour teriyaki sauce in a bowl, add tempeh slices and marinate. Carefully mix so all strips are well-coated (don’t mix hard or they’ll break apart). Marinate for at least 10 minutes.

Place strips in a single layer on a baking sheet that has been liberally coated with nonstick spray. Strips should not be touching. Bake for 15 minutes. Flip and bake an additional 10 minutes. Remove from oven and brush with additional teriyaki sauce.

NOTE: Alternatively, you can sauté tempeh strips. Liberally coat a skillet with nonstick cooking spray and warm over medium heat. Add tempeh strips, reserving leftover teriyaki sauce, and carefully sauté for about 7 minutes. During the last 1 to 2 minutes, add the remaining teriyaki sauce and continue to sauté to thoroughly coat pieces.
