This dressing is a staple in Middle Eastern cuisine; it’s well-known for its mellow flavor and ability to make just about any dish sing. It stars tahini paste, which is made of hulled, toasted sesame seeds (sold in the condiment or international foods section of most markets), along with a dash of extra virgin olive oil, lemon juice and garlic. The result: a flavorful accompaniment for various Mediterranean dishes, including falafel, salads and hummus. We can’t get enough of it in my house…we drizzle it on cooked veggies, sandwiches, and everything in between.

- • ¼ cup tahini (sesame paste, mixed well)
- • 2 teaspoons extra-virgin olive oil
- • 2 tablespoons lemon juice
- • 3 to 4 tablespoons warm water
- • ½ teaspoon garlic powder
- • ¼ teaspoon kosher salt, more to taste
- • ¼ teaspoon ground black pepper, more to taste
Mix tahini with olive oil and lemon juice until well combined. It will begin to thicken substantially.
Add warm water (starting with 3 tablespoons and adding a 4th if you want a thinner dressing consistency), along with the garlic, salt and pepper, and continue to mix until it becomes a smooth dressing-like consistency. Season with extra salt and pepper to taste.
