Nothing goes better with chocolatey brownies than…ice cream! And what better way to enjoy the pair than with an out-of-this-world Brownie Ice Cream Sundae?! Here’s an indulgent creation I made without using a drop of added sugar: I used Swerve Sweetener’s boxed brownie mix for the base, and then topped it with a hearty scoop of my 3-ingredient Peanut Butter Banana Ice Cream. OMG. It.Is.Insanely.Delicious. Give it a try!

This recipe makes 12 servings

• 1 box Swerve Brownie Mix

• 8 large ripe bananas, peeled and frozen
• Splash of milk, if needed for easier blending
• ¼ cup natural peanut butter 


Prepare the brownie mix according to package directions.

Break the frozen bananas into large chunks and place in the bowl of a food processor (If your bananas have been in the freezer for longer than a day, it’s best to thaw for about 10 minutes before pureeing). Puree the bananas until they are completely smooth and no frozen chunks remain. If the bananas are too hard to blend, add a splash of milk for easier pureeing. Add peanut butter to the bowl and puree for a few seconds longer to combine.

Serve brownies on individual plates and top with a scoop of Peanut Butter Ice Cream.
