Traditional eggnog, made with cream, whole milk and egg yolks, will cost you a shocking 350 to 450 calories and 12 grams of saturated fat per cup! My slim-style version satisfies your craving for half the calories and sugar—and a fraction of the fat.

This recipe makes 5 cups
Ingredients:
  • 1 package instant pudding, vanilla (3.4 ounce)
  • 5 cups lowfat (1%) milk (or milk of choice)
  • 3/4 teaspoon rum extract*
  • 1/2 teaspoon nutmeg, fresh
  • Dash of cinnamon (optional)

*For an adult beverage, swap the rum extract for a few ounces of real rum!

Preparation:

Combine the milk, pudding mix, rum extract and ground nutmeg in a blender and blend until mixed.

Pour into a pitcher and refrigerate for up to 20 minutes to allow the eggnog to set. Note: The longer you leave it to chill, the thicker it will get, so be sure to take it out by the 20-minute mark and serve immediately. (If it’s too thick, add milk a little bit at a time and blend to make sure you get the consistency you want.) Garnish each glass with a sprinkle of a little extra nutmeg or cinnamon and serve.
