Enter my Pumpkin Pie Shots, a seasonal treat that’s as adorable as it is delicious. These petite gems capture the essence of the season with a healthy base made from smooth vanilla yogurt blended with rich pumpkin purée. This combination not only offers a creamy and indulgent texture but also adds a nutritious touch to your festive dessert spread.

The pumpkin pudding base is then layered with crushed graham crackers, providing a subtle crunch that sort of mimics the pie crust we all love in a traditional pumpkin pie. Top off your mini creations with a fluffy squirt of whipped topping and a sprinkling of mini chocolate chips. These beauties provide a perfect ending to a wintery dinner feast.

This recipe makes about 10 to 12 shots
Ingredients:
  • • ¾ cup low-fat vanilla yogurt
  • • ¾ cup 100% pumpkin puree
  • • ½ teaspoon pumpkin pie spice (more to taste)
  • • 1 tablespoon packed brown sugar
  • • 6 graham cracker squares, crushed
  • • Aerated whipped cream
    • Mini chocolate chips, optional
Preparation:

In a mixing bowl, combine yogurt, pumpkin puree, pumpkin pie spice and brown sugar until smooth. Using a small spoon, add about 1 tablespoon worth to the bottom of each shot glass and sprinkle on graham cracker. Layer on another tablespoon of pumpkin filling. Right before serving, add a squirt of whipped cream and garnish with a few mini chocolate chips and a small piece of graham cracker.
