This single-serve dessert is a pumpkin lover’s dream come true. It comes together in a matter of minutes so you can whip it up whenever you’re in the mood and there’s no wait for sweet satisfaction. Plus, you can finish it off with your favorite toppings: whipped cream, a sprinkle of spices and even dark chocolate chips.

This recipe makes 1 serving

• ¼ cup boxed vanilla or yellow cake mix
• 2 tablespoons water
• 2 tablespoons canned pumpkin puree
• ¼ teaspoon pumpkin pie spice
• Optional toppings: whipped cream, ground cinnamon or pumpkin pie spice blend, dark chocolate chips


Mist the inside of a mug or ramekin with oil spray. Add the cake mix, water, pumpkin puree and pumpkin pie spice, and stir until everything is well combined. Place in the microwave for 2 to 3 minutes. Let slightly cool. Garnish with optional toppings.
