Serve up this thick and creamy super-duper soup. It’s dairy-free, made with wholesome ingredients, and ready in less than 30 minutes. Plus, you can enjoy it year-round since it’s just as tasty hot or cold—eater’s choice. Before digging in, top each bowl with sliced scallions and kiwi to create a fun (and contagious) smiley face :).

- • 2 large leeks, white and light green parts, sliced into ½-inch rings, washed well and drained
- • 1 large Russet potato, peeled and diced
- • 1 tablespoon olive oil
- • 3 cups chicken broth, reduced sodium
- • ¼ teaspoon dry thyme
- • ¼ teaspoon Kosher salt
- • 2 kiwis, 1 peeled and small diced (~¼ inch), the other one to make a face
- • 3 large scallions, chopped, plus 1 or 2 for the face as shown
- • 2 teaspoon apple cider vinegar
Heat oil in a soup pot over medium-high heat. Add leeks, season with salt, and stir to coat. Sauté until wilted, about 5 minutes.
Add potato, chicken broth and thyme. Boil and then reduce heat and allow soup to simmer until potatoes are soft and tender, about 20 minutes. Then, place in a blender and purée till smooth. Mixture will be thick, so add up to 1 cup of broth or water to reach desired soup consistency. Put back in the pot and keep warm (or chill to serve cold).
While soup cooks, prepare the kiwi-scallion garnish: In a small bowl, combine the diced kiwi, chopped scallion, vinegar and salt. Stir together and let it marinate until you’re ready to serve. Season with salt and pepper, to taste.
To serve: Ladle the soup into bowls. Make a ¼-inch slice of kiwi and cut into quarters for eyes. Make a small slice from the green end of a scallion to make a small circle, and place on the kiwi for eyeballs. Cut another piece of scallion on a bias for a nose. Make a smile with the marinating kiwi-scallion garnish.
