I call this my 4-ingredient vacation…. because a frozen coconutty-pineapple beverage instantly transports me to the beach!  It’s tastes clean and refreshing, yet rich and indulgent, and is comprised of wholesome ingredients you can feel good about slurping. Lick-able lesson: On scorching-hot summer days, pour your smoothie into ice pop molds and freeze for a fun tropical treat.

This recipe makes 1 smoothie
Ingredients:
  • • 1 cup frozen pineapple chunks
  • • ½ cup lite coconut milk (mix well after opening can)
  • • 1 tablespoon shredded coconut
  • • 1 drop coconut extract 
  • • 3 to 5 ice cubes
Preparation:

Combine all ingredients in a blender until smooth and frothy. Add a drop more milk if needed.

To Make Ice Pops: Pour smoothie into standard ice pop molds and freeze for at least 6 hours, or overnight.
