Peanut Butter-Stuffed Strawberries

Powdered peanut butter is a fantastic way to enjoy PB goodness with far fewer calories. It’s made from peanuts that are defatted and then ground into a fine powder. When you’re ready to enjoy, all you have to do is add water and mix until it’s creamy.

Don’t get me wrong, I think peanuts—and natural nut butters—are fabulous. They offer heart-healthy fats and a whole lot of perks, but the powdered version works really well in some recipes, including this one. There are several different brands of PB powder; you can find it in the peanut butter section of the grocery store.

In this strawberry spin, I hollow out fiber-rich berries and then pipe the peanut butter in. They make a fun snack, dessert, or even energizing breakfast. A serving (8 to 10 filled berries) delivers an impressive 10 g fiber and 21 g protein. They’re berry good!

This recipe makes 1 serving
Ingredients:
  • • 8 to 10 strawberries, stems removed
  • • ½ cup peanut butter powder, prepared with water according to the package directions
  • • 1 tablespoon chia seeds (optional)
Preparation:

Slightly hollow out the strawberries to create just enough space for the peanut butter. (If you’d like the strawberries to stand up straight, slice a tiny piece off the bottom to create a flat base.)

Place the peanut butter in a zip-top bag and cut one tiny hole in the corner of the bag. Pipe the peanut butter into the strawberries. Sprinkle the chia seeds on top, if desired.
