This recipe makes 1 serving
Ingredients:
  • • ½ cup old-fashioned rolled oats
  • • ½ cup almond milk (or any other preferred milk)
  • • ½ cup nonfat or low-fat Greek plain yogurt*
  • • 1 Tablespoon chia seeds or ground flaxseeds (also called flax-meal)
  • • 1 Tablespoon key lime juice (or regular lime juice)
  • • ½ teaspoon lime zest
  • • ½ teaspoon vanilla extract
  • • 2 teaspoons maple syrup or honey
  • • Pinch of salt
  • • 1 to 2 Tablespoons granola cereal, optional

*You can swap in part-skim ricotta cheese or whipped cottage cheese

Preparation:

Add all the ingredients (except the granola cereal, if using) in a small mixing bowl and stir until well-blended. Transfer to a small mason jar or pretty container with a lid, cover and stash in the fridge for at least 3 hours to overnight. Right before eating add crunchy granola cereal and dig in!

Add 35 calories for each Tablespoon of granola.
