If you have fond memories of savoring a box of Junior Mints at the movie theatre, this 3-ingredient version will most definitely hit the (mint-chocolatey) sweet spot. This recipe yields a batch of 10, but you can easily make just one or two when a craving calls. To make a single piece, melt 1 scant tablespoon of chocolate chips and mix with a drop of mint extract. Dip and swirl your marshmallow to coat the top, and enjoy warm or allow the chocolate to firm in the fridge.

This recipe makes 10 pieces
Ingredients:
  • • ½ cup semi-sweet or dark chocolate chips
  • 10 marshmallows
  • • A few drops of peppermint extract
  • • Mint leaves (optional for garnish)
Preparation:

Melt the semi-sweet or dark chocolate chips in the microwave or double boiler. Add in a few drops of peppermint extract to the melted chocolate. Start with just one drop, mix and taste, then add more as needed. The extract is potent so go slow when adding it into the chocolate to avoid overdoing it. Dip the top portion of the marshmallows into the chocolate and set on a tray or parchment paper. You can enjoy them while the chocolate is melty and warm, or let them firm in the fridge. Garnish with optional mint leaves.
