Who else spent their summers outdoors with the neighborhood kids—sticky but fun-filled days turning into just slightly less sweltering evenings—all of us anxiously waiting to hear the familiar chimes of the ice cream man? If we were lucky, our parents gave us some change, which we’d use on a sweet and refreshing Italian ice. Whatever our favorite flavor was, (cherry, lemon or rainbow), we couldn’t wait to dig our wooden spoon and hit the sugary bottom…then tilt the cup and slurp it all up. Yummmm. Here, I’ve recreated the chilly treat using just two ingredients: frozen fruit and LaCroix Sparkling Water without a drop of added sugar. It’s nice, nice baby!

This recipe makes 4 servings
Ingredients:

Mango-Strawberry Ices

  • • 1½ cups frozen mango chunks
  • • 1 cup frozen strawberries
  • • ½ cup LaCroix Mango Sparkling Water

Cherry-Pineapple Ices

  • • 2 cups frozen pitted cherries
  • • ½ cup frozen pineapple chunks
  • • ½ cup LaCroix Cerise Limón Sparkling Water or LaCroix Cherry Blossom Sparkling Water

 

Preparation:

Add the frozen fruit into a high-powered blender. Pour in LaCroix and purée until just thick and smooth. Stop and scrape the sides if the contents don’t blend easily (you can also add a splash of extra LaCroix if you need more liquid.). Scoop into single-serve ramekins or a pint container and place in the freezer to harden for a few hours to overnight. This will last for up to 3 months in the freezer.
