You’ll go crazy for these kernels dusted with an addictive zesty seasoning. The lime brings freshness and brightness and the Cajun blend delivers a perfect pop of spice. Enjoy a bowl for an at-home movie night or while watching a ballgame. When you’re choosing your cheese, it’s best to go dry and salty. Cotija, often referred to as Mexican Parm, is a good pick. I also like Pecorino, which pairs well with the lime and spice. The lime zest is optional, but I highly recommend it because it takes this popcorn over the top… and adds a pretty sparkle of green.

This recipe makes about 12 cups (3 cups/serving)
Ingredients:

• 12 cups light popcorn (air-popped or store-bought)
• 1½ to 2 tablespoons Creole or Cajun seasoning blend*
• 2 to 3 tablespoons pecorino or cotija, finely grated
• 1 tablespoon freshly grated lime zest or more to taste

*Most blends already contain salt. If you use one without salt, add 1 to 2 tsp salt into seasoning blend. You can always taste and sprinkle on more salt if needed right before serving.

Preparation:

Spread popcorn out on a baking sheet and mist with olive oil spray until well coated. Sprinkle seasoning blend evenly over the popcorn. Mist popcorn again, and sprinkle with cheese and lime zest. Serve immediately.
