Eggs-traordiary “snow people.” It’s a protein-packed snack that’s filled with seasonal splendor and nutrition. Plus, it makes a fun and festive activity to do with your kids.

- • 2 hardboiled eggs, peeled and chilled
- • 1 carrot
- • 1 skewer
- • 5 peppercorns
- • 1 pretzel or sprig of parsley
- • 1 green onion (scallion), optional
Trim the tops and bottoms of the eggs so they’re flat and can stand upright.
Cut the carrot into thin coins, ~¼ inch in width, one with a larger diameter than the other. Stack the carrot rounds with the larger one on top and skewer a hole through the middle, but not all the way through (you don’t want a hole in the top of your hat.)
Attach the 2 eggs with a skewer leaving ~½ inch sticking out the top (depending on the thickness of your carrot hat.) Put the snow person’s hat on the skewer sticking out the top.
Puncture small holes for eyes and buttons with a toothpick and push peppercorns into the holes. Similarly, puncture a hole on either side of the bottom egg for arms and attach pretzels or sprigs of parsley. To make the carrot nose, cut the carrot into a small, thin triangular slice and attach to the snowman after puncturing a hole first.
Lastly, keep your snow-person warm by slicing a green onion and wrapping it around its neck. 😉
