This frosting is delicious on cupcakes, but can also be used on whole-grain toast as a spread, or mixed into plain yogurt, oatmeal, or ricotta or cottage cheese to add delicious flavor and a dose of hair-helping nutrients. Date contains the trace element silicon while guava is packed with vitamin C and the white beans are a super source of both iron and protein.

- 1/2 cup pitted dates (about 10 small or 5 large)
- 1/2 cup canned cannellini beans, drained and rinsed
- 1/4 cup guava nectar or juice*
- 5 medium strawberries
- 2 tablespoons chia seeds
*If you can’t find guava nectar or juice, 100 percent orange and pineapple juices can be used as a substitute.
Add the dates, beans, nectar, berries, and 1/4 cup water to a blender and puree until smooth. Stir in the chia seeds and refrigerate for at least 30 minutes. (Chia seeds act as a gel to firm mixture into a frosting-like spread.)
Try adding 1 tablespoon frosting on each of my Blender Cupcakes.
Makes 1 cup frosting; per 1 tablespoon frosting
