These flavorful super seeds make the perfect sweet and crunchy treat—and the recipe comes together in 15 minutes flat (that even includes bake time!). Aside from their cinnamon-goodness, they deliver heart-healthy fats, and filling protein and fiber. You can munch them on their own, or sprinkle them into yogurt, oatmeal, muffins, pancakes…eater’s choice!

This recipe makes 1 cup
Ingredients:
  • 1 cup pepitas, raw and shell-off
  • 1 teaspoon olive oil
  • 1½ teaspoons ground cinnamon
  • 1 tablespoon sugar
  • ¼ teaspoons kosher salt
Preparation:

Preheat oven to 325°F.

In a small bowl, add raw pepitas with olive oil and toss with a spoon to coat. Add all seasonings and mix well.
Lay out on a baking sheet lined with parchment paper in a single layer and roast in oven for about 10 minutes. If you’d like them a bit toastier and crunchier, remove from oven and shake the seeds around, then put back in the oven for another 2 to 4 minutes. Watch closely so they don’t burn. Let them cool and enjoy!
