Whip up a batch of your own good-for-you granola with this simple and wholesome recipe featuring oats, cherries and pumpkin seeds. Use it to create a yogurt parfait, sprinkle some over your salad for a satisfying crunch or add it to trail mix.

This recipe makes 12 servings
Ingredients:
  • • 3 cups old-fashioned rolled oats
  • • 1 teaspoon cinnamon
  • • ½ teaspoon ginger
  • • ½ cup unsweetened applesauce
  • • ¼ cup maple syrup
  • • 1 teaspoon vanilla extract
  • • ¼ cup unsweetened dried cherries
  • • 2 tablespoons raw pumpkin seeds
Preparation:

Preheat oven to 275˚. Line a baking sheet with foil.

In a large mixing bowl, combine oats, cinnamon and ginger. In a separate, smaller bowl, mix together applesauce, maple syrup and vanilla. Add the wet mix to the dry mix; stir to combine. Fold in the cherries and pumpkin seeds and pour the mixture onto the prepared baking sheet in one even layer.

Bake for about 45 minutes, stirring every 10 to 15 minutes until lightly browned and crunchy. Remove from the oven and let cool.

Makes 12 servings (about ¼ cup per serving)
