This naturally sweet cherry compote is the perfect topping for my delicious vanilla-cinnamon French toast. It’s a decadent way to start your day and satisfy your sweet tooth without using any maple syrup or other form of added sugar.

FOR THE COMPOTE:
- 1 cup of frozen, pitted sweet cherries
- 1 teaspoon vanilla (or balsamic vinegar)
FOR THE FRENCH TOAST:
- 1 whole egg
- 1 egg white
- Dash ground cinnamon
- Dash ground nutmeg
- 1 teaspoon vanilla extract
- 2 slices 100% whole-grain bread
For the compote:
Add cherries and vanilla to a small saucepan over medium heat. As cherries begin to defrost, mash down with a spoon as you stir in order to release some of the juices from the cherries.
Cook, stirring occasionally, for about 5 minutes, or until juices thicken slightly. Remove from heat and set aside while you prepare the French Toast.
For the French toast:
Whip the whole egg plus the egg white with the cinnamon, nutmeg and vanilla extract in a small bowl.
Generously coat a skillet with oil spray and preheat over medium-high heat. Dunk and coat both slices of bread in the egg mixture. Place the bread slices in the skillet and cook for 1 to 2 minutes per side, or until crisp.
Pour Cherry Compote over French Toast and enjoy!
