This crunchy concoction is filled with spice and refreshing cucumbers. Cukes are comprised of about 96 percent water, making them one of the most hydrating produce picks out there. This recipe makes 2 cucumber boats
Ingredients:
  • • 2 large cucumbers
  • • ½ cup crumbled blue cheese
  • • 3 scallions, sliced, plus more for garnish
  • • Chopped fresh parsley for garnish
  • • 2 to 3 tablespoons Buffalo Ranch Dressing
Preparation:

FOR THE CUCUMBER BOATS: Cut 1 cucumber in half or in thirds lengthwise. Using a spoon, scoop out the seeds and insides and discard them.

FOR THE BUFFALO-CUCUMBER FILLING: Peel the second cucumber and cut it into ¼-inch cubes. You’ll have 2 cups. In a medium bowl, mix the cubed cucumbers, blue cheese, scallions, and 2 to 3 tablespoons of the Buffalo Ranch Dressing. (Save leftover dressing in an airtight container for up to 1 week.)

Stuff the cucumber boats with the cucumber salad and garnish with extra scallions and parsley.
