This recipe makes 1 serving
Ingredients:
  • • 1 whole-grain tortilla (any brand with no more than 100 calories)
  • • ¼ cup tomato sauce
  • • ¼ cup part-skim shredded mozzarella
  • • 2 slices turkey bacon, cooked and chopped
  • • 1 cup baby spinach leaves
  • • 1 to 2 large eggs
Preparation:

Preheat oven to 450˚. Line a baking sheet with parchment paper.

Place the tortilla on the baking sheet and toast in the oven for 2 minutes on each side until crispy. Remove from oven and spread tomato sauce evenly over the top.

Then scatter the spinach leaves, cheese and bacon on top. Place pizza back in oven until cheese is melted, about 4 additional minutes.
While pizza is baking, cook the egg to your preference (scrambled or sunny side up) in a skillet coated with oil spray. Remove pizza from oven and place the egg on top. Cut into 4 equal slices and dig in.
