Pizza for breakfast? Yes! This healthy spin on a classic afternoon dish will get you started off on the right foot. You’ll score fiber from the whole-grain tortilla and satiating protein from the eggs and turkey bacon, both of which will keep you feeling full until lunch. Grab a slice.

This recipe makes 1 serving
  • 1 whole-grain tortilla (any brand with no more than 80 calories)
  • ¼ cup tomato sauce
  • ¼ cup part-skim shredded mozzarella
  • 2 slices turkey bacon
  • 1 cup baby spinach
  • 1 large egg

Preheat oven to 450˚. Line a baking sheet with parchment paper or aluminum foil.

Place the tortilla on the baking sheet and bake in the oven for 2 minutes on each side.

While the tortilla is in the oven, cook the turkey bacon in a skillet according to package directions, about 5 minutes. Let it cool and dice into pieces.

After tortilla has cooked for 2 minutes on each side, remove from oven and spread tomato sauce evenly over the top. Then spread spinach, cheese and diced bacon on top. Place “pizza” back in oven until cheese is melted, about 4 additional minutes.

While “pizza” is baking, cook the egg to your preference (scrambled or sunny side up) in a skillet coated with oil spray.

Remove “pizza” from oven and place the egg on top. Cut into 4 equal slices and dig in.
