Get ready for a deconstructed bacon cheeseburger…nacho-style! WHAT?!?! Guys, this is off the charts. It’s a sheet pan layered with everything you love and crave in a restaurant burger—savory meat and bacon, melty cheddar, onions, shredded lettuce, tomatoes, and pickles—piled high on a crunchy base of tortilla chips and topped with a two-ingredient “special sauce” to bring it all the way home. It’s so fun to make and serve, but it’s most fun to dig in and devour. As Jimmy Buffet says, it’s cheeseburger in (nacho) paradise!

This recipe makes 6 to 8 servings
Ingredients:

Nachos

  • 1 pound ground turkey (90 to 93% lean)
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon reduced-sodium soy sauce
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ¼ teaspoon kosher salt
  • ¼ teaspoon black pepper
  • 8 to 10 ounces tortilla chips
  • 4 strips turkey bacon, cooked and crumbled
  • 1½ cups shredded 2% reduced-fat cheddar cheese, mild or sharp
  • ¼ to ½ red onion, thinly sliced
  • 6 to 8 pickle chips
  • 1 tomato, chopped
  • ½ to 1 cup shredded lettuce

Special Sauce

  • ¼ cup ketchup
  • ¼ cup low-fat mayonnaise

*Alternatively, you can squirt plain ketchup and/or mustard over the tops, instead of making a special sauce.

Preparation:

Preheat the oven to 400˚.

Mist a large skillet with non-stick oil spray. Add the ground turkey, Worcestershire sauce, soy sauce, garlic powder, onion powder, salt, and black pepper. Cook over medium-high heat, breaking the turkey apart with a wooden spoon or spatula into small crumbles, until it’s cooked through and slightly browned.

Lay the chips on a baking sheet, covering the entire surface (position them face up to better hold all the toppings). Scatter the cooked turkey meat evenly over the tops. Sprinkle on the turkey bacon, cheese, and onions. Place in the oven for 6 to 8 minutes so the onions soften and the cheese melts. Remove from oven and garnish with pickle slices, tomatoes and lettuce.

Make the sauce by mixing the ketchup and light mayo, and drizzle over the top using a spoon or piping bag. Or, simply squirt ketchup and/or mustard over the tops and dig in!
